Measurement vs Weight: It seems a measuring cup can give you far more flour than your recipe needs BUT depending which conversion calculator or website your choose the weight can differ between 4.25 ounces through 4.41 ounces to 5 ounces.
How much does a cup of All Purpose Flour weigh?
How much All Purpose Flour does my recipe really need?
If I don’t want to add the Dry Milk Powder do I need to increase the flour?
One of the QVC videos says it can be omitted?.
Functions:
So far I have not found details of the various Menu Functions for example how long does it mix, rise, bake?
I have been using the Menu 2 Rapid Function for my recent 1 lb loaf experiments, 2hrs 15mins – 10 minute Mix and Rest, 10 minute Mix and Rest, 10 minute Knead, 45 minute Rise, 1hr Bake.
I stop the machine before it “Keeps Warm” and set a timer for 15 minutes before transferring the loaf to a cooling tray.
My unverified observation of the Menu 1 Function for a 1 lb loaf, 3hrs 15mins – It seems to Mix and Rest for the first 18 minutes then it does a 10 minute rest followed by another 20 minute Mix/Kneading. During the next 1hr:23mins it rises “Knocks Down: for 1 minute then does it’s final rise before baking for about 1hr: 4mins.
Yeast Amounts: I found these Guides for Fleischmann’s Yeast when I started researching bread making at the start of the COVID 19 pandemic in 2020. Active Dry Yeast – 2 Rises, Bread Machine Yeast – 1 rest and 1 rise.
¾ tsp Active Dry Yeast or ½ tsp Bread Machine Yeast for each cup of flour.
This does not seem to apply to the Cook’s Essentials Breadmaker’s Basic White Bread Recipe for example:
The 1 lb loaf using 2 cups of flour states ¾ tsp Active Dry Yeast.
The 1½ lb loaf using 3 cups of flour states 1 tsp Active Dry Yeast.
A lot less than the amounts recommended in the guide. Does it work?
